In a bid to change my diet, I have been hunting for sweet potato recipes all through this year and passing them over to the best cooks at home: my mom and sister :) . For a long time, we have cooked sweet potatoes simply by peeling and boiling or boiling with skin and serving. They take quite a short time to cook, so the experimentation will be quite easy, and also very healthy for you especially if you are trying it out with the Orange fleshed or purple fleshed sweet potatoes!

3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter
1 cup sugar

TOPPING:
1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

PREPARATION
