Sweet Potato Recipes: Sweet Potato Casserole

In a bid to change my diet, I have been hunting for sweet potato recipes all through this year and passing them over to the best cooks at home: my mom and sister :) . For a long time, we have cooked sweet potatoes simply by peeling and boiling or boiling with skin and serving. The internet has proved to be a great dietary/nutrition companion for me, helping me find hundreds of recipes and some of the best are found on a website for recipes called Food Network.

There are over 500 sweet potato recipes  on Food Network, so remember to pass by sometime and try out the various recipes. They take  quite a short time to cook, so the experimentation will be quite easy, and also very healthy for you especially if you are trying it out with the Orange fleshed or purple fleshed sweet potatoes!

We have been trying out two of these recipes and they have proved to be quite delicious. Today I will introduce the Sweet Potato Caasserole
The sweet potato Casserole is a quintessentially Southern United States food. By the way, if you are looking for some of the great sweet potato recipes, look towards the Southern United States where most of the sweet potato in the US is grown and where many creative sweet potato recipes have been created. The sweet potato casserole is normally eaten during Thanksgiving in the United States.

Here is a simple recipe for a sweet potato Casserole for you to try out this weekend :)

INGREDIENTS
3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter
TOPPING:
1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted
  
PREPARATION
Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.Bake at 350°F. for 35 to 40 minutes.
