Sweet Potato Leaves Recipe

In the Philippines, sweet potato leaves are a great recipes yet in Africa, we give the sweet potato leaves to animals and then we complain of famine :) So today I bumped on two recipes, one is a Filipino recipe and the next one is an Africa sweet potato leaves recipe and hopefully it's on a Youtube video so it will help give you some tips on preparing an African dish. It's time for Africa to embrace our traditional dishes as diabetes is slowly creeping into our cities!

Ingredients
1 medium bunch of fresh  sweet potato leaves, trimmed 
5 cups water
2 medium tomatoes, sliced or quartered
1 medium onion, minced
1 thumb-sized ginger, minced
Juice of 1 lemon
1 tbsp olive oil
3 tbsp soy sauce






Instructions

In a small bowl, combine ginger, lemon juice, olive oil and soy sauce.

2.Heat water in a pot, bring to a boil, add sweet potato leaves and blanch for 30 seconds. Drain. Transfer to a serving dish.
3.Pour the lemon juice mixture over the blanched sweet potato leaves, add tomato slices and onions, and mix well. Serve.

 This dish is traditionally served with freshly-cooked, piping-hot white rice.
So the next time your girlfriend calls you for Pizza, just buy some sweet potato leaves and take home :) It's one of the most nutritious foods out there!
